They are super versatile and well, you can't beat the price. I know a few baker's who will tell you that a doctored up cake mix is actually better than some homemade cakes they have had at fancy bakeries. While I won't go that far, I can say that they hold a place in my pantry and are often the base of something yummy.

That is the case with what is one of my favorite cobblers. I grew up making cobbler alongside my Granny, and she would be aghast to think I had even begun to call this a cobbler. So, I have to put out there that it isn't a traditional cobbler in any sense of the word, but it is a similar dessert that is easy, delicious, and is perfect for making on those busy days when a from scratch cobbler isn't an option.

What Cake Mix Should I Use?

My pantry typically holds Betty Crocker cake mixes because they are easy to find, affordable, and often on sale at my local grocery store. That doesn't mean that is what you have to use. There are tons of great cake mix brands out there, and I am not too proud to say the most generic boxed mix has held a place in my pantry on many occasions.

The only thing I will suggest is that for this particular recipe, you choose a yellow cake mix over the basic vanilla white cake mix. The richer flavor in the yellow cake mix makes it a great addition to the fresh bright berries. Plus, it just tastes a bit more buttery which results in a better overall flavor.

What Fruits Can I Use In This Recipe?

The best fruits for cobblers are berries, but I have also made many cobblers with peaches and apples. Mangoes, pineapple, cherries, strawberry, peaches, pears, and apples are my standard choices for cobblers, but you can get creative and use other fruits if you want.

I would caution against using melon in a cobbler as it does not taste good when hot. When choosing fruit for your cobbler, focus on something that is naturally sweet and that when cooked down retains a nice texture that is pleasant with the crust. Can I Use Fresh Berries Instead of Frozen?

You can definitely use both fresh or frozen berries for this cobbler. I usually have frozen mixed berries on hand, so it was natural to grab those for this recipe, but it isn't necessary. You could definitely use fresh berries if you prefer. There is no need to change anything in the recipe if you use fresh berries.

Can I Use Diet Soda Instead?

You can definitely use diet soda for this recipe if you want. While I have used Sprite for this type, you can also use 7-Up or even ginger ale if you want. There is no specific type of soda, but the lemon line or mild flavors are best when working with a cobbler. I would avoid using cola for making cobbler as the flavors wouldn't be as nice together.

One suggestion would be that if you want to use a cola, it works best when paired with a chocolate cake mix. For a fun twist on this recipe, you could definitely use mixed berries, strawberries, or cherries topped with chocolate cake mix and a cola for a tasty treat.

What Should I Serve With This Cobbler?

I like to top my cobbler with vanilla ice cream, but you can also top this with whipped cream, Cool Whip, or just a dusting of powdered sugar. Chef's Tip

If making a lot of cobblers and cakes, stop fussing with plastic wrap. Instead, purchase the 9"x13" baking dish lid. I have a personalized baking dish lid I found on Etsy that I love. It seals the cake into an air tight container but keeps the top hard so easy to store in the refrigerator and not worry about smashing anything.
