I always found the idea of "Pie Day" for March 14th (3.14) to be really cute. At Texas Cooking, we have been celebrating it with the classic custard pie from the South, Buttermilk Pie.

This is a wonderful, old-fashioned pie. Don't be put off by the buttermilk; this isa sweet and flavorful dessert. No need for an electric mixer here. You can easily beat this to satisfaction by hand in a good mixing bowl.

Ingredients:

  • 3 eggs, well beaten

  • 1/2 cup (1 stick) butter, melted and cooled

  • 1-1/2 cups sugar

  • 3 tablespoons all-purpose flour

  • 1 cup buttermilk

  • 1 teaspoon vanilla extract

  • 1 unbaked 9-inch pie shells

Preparation:

  • Preheat oven to 400°F.
  • In a medium bowl, combine beaten eggs, melted butter, sugar and flour, and beat until smooth.
  • Stir in buttermilk and vanilla. Pour into unbaked pie shell.
  • Bake 10 minutes at 400°F. Reduce heat to 350°F and bake an additional 40 to 45 minutes, or until center is firm. Keep an eye on it to make sure it doesn't over-brown.
