Ok so I really think I must be obsessed with taking photos of commercial dips in the supermarket and coming home and just ‘winging’ it to see if I can make it for a fraction of the price and having no additives or preservatives in it! This is now the tenth one that I've done! mmmm clearly I have an obsession with eating dips too! :) I love how the dips can take two seconds in the Thermomix to blitz, it is just awesome! :)

ThermoFun – Beetroot Dip Recipe

Ingredients
- 100g (approx.) fresh beetroot, unpeeled
- 1 garlic clove, unpeeled
- 50g plain yoghurt
- 30g parmesan cheese, cubed
- 10g lemon juice
- 10g olive oil
- 70g cashews, unsalted
- ¼ teaspoon cinnamon ground
- ¼ teaspoon coriander, ground
- ¼ teaspoon cumin, ground
- ¼ teaspoon paprika
Instructions
- Pre heat oven to 180°C.
- Place beetroot and garlic onto a baking tray and roast 45 mins.
- Once beetroot has cooled, peel and quarter (use disposable gloves!) and place into TM bowl. Squeeze out garlic from clove.
- Add remaining ingredients and chop 1 sec / Turbo.
- Scrape down and repeat until desired consistency.
- Enjoy dip with crackers!

LOVE this dip. My daughter can't have dairy so I used Tahini in place of the yoghurt, upped the lemon juice to 15g to make up for lack of tartness due to no yoghurt and I added the parmesan last after I had taken my daughters portion out.

Thanks Megan pleased you enjoyed it. If you like camembert cheese make sure you try White Costello Cheese! mmmm my favourite and it's quite similar to camembert. :)

Thank you Kate! I also made it with raw beetroot and dairy free. I added dulse flakes and dairy free yoghurt.
I think children would love it! Very yummy!!
Next time I will try yeast flakes instead Dulse flakes for a change.

I made this with fresh, raw beetroot (It is far too hot here today to turn the oven on!) and it turned out lovely.
I don't think I'd even bother roasting it next time, it was so good!
