Croquettes are a staple from my childhood. Growing up, my mom would visit our neighborhood bakery every Saturday to buy us Cuban breakfast! Ham croquettes, Cuban bread, guava pastries — all our faves! We looked forward to it every week! If you don’t know what croquettes are, they are crispy fried logs made with pretty much any delicious filling.

On this blog, I’ve made croquettes filled with ground ham, ground chicken and even pizza. For this croquette recipe, I really wanted to make vegan croquettes with black beans, onions, spices and Califa’s Oat Barista Blend instead of eggs. I gotta tell you, these turned out WAY better than I expected!

Califa’s Oat Barista Blend is delicious, dairy free, nut free, sugar free, gluten free, carrageenan free, non-GMO, vegan and kosher. Their oat milk is unsweetened and made with whole rolled, gluten free oats grown in North America, without any gums nor stabilizers. Here’s how I made these vegan croquettes.

Food Processor

If you are making salsas or sauces or simply prepping ingredients, a food processor is a must have! It chops and blends so quickly, saving you so much time!

How to Make Vegan Black Bean Croquettes

In a food processor, add black beans, onion, cumin, oregano, smoked paprika, salt and pepper. Pulse until well combined. Transfer filling to a bowl and place in the fridge for 10 minutes. Placing the mixture in the fridge will help with forming the logs so so don’t skip this step. The filling tastes savory and smoky. So good! Remove the filling from the fridge. Form logs from the mixture. In one bowl, add Califa’s Oat Barista Blend and add the bread crumbs in another bowl. Dip each croquette in the oat milk and then coat in bread crumbs.

You can make the croquettes in 3 different ways.

To fry the croquettes on the stove:

  • In a saucepan, heat enough oil to cover the croquettes completely. Fry each croquette until golden brown, approximately 3-4 minutes.

To bake the croquettes in the oven:

  • Preheat the oven at 425 degrees F. Bake on a parchment lined baking sheet for 20 minutes until cooked through/crispy.

To make the croquettes in the air fryer:

  • Preheat the air fryer at 400 degrees F. Spray croquettes with cooking spray. Cook for 20-25 minutes until crispy.

I made these vegan croquettes in this air fryer and I was impressed with the result. Just look how deliciously crispy they look!

That’s all folks! You can serve these with a simple salad, guacamole, cilantro garlic sauce or even chipotle mayo.

Ingredients

  • 2 cans low-sodium black beans (15 ounces each) drained and rinsed
  • 2 tablespoons chopped onions
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup Califia Farms Oat Barista Blend divided
  • 1 cup plain bread crumbs divided
  • 1/4 cup avocado oil for frying

Instructions

  • In a food processor, add black beans, onion, cumin, oregano, smoked paprika, 1/4 cup Califia Farms Oat Barista Blend, 1/4 bread crumbs, salt and pepper. Pulse until well combined. Transfer filling to a bowl and place in the fridge for 10 minutes.

  • Remove the filling from the fridge. Form logs from the mixture. Repeat until you have all the croquettes done. Set aside.

  • In a bowl, add the rest of the Califia Farms Oat Barista Blend. In another bowl, add the rest of the bread crumbs. Dip each croquette in the oat milk and then coat in bread crumbs.

To make the croquettes on the stove

  • In a saucepan, heat enough avocado oil to cover the croquettes completely. Fry each croquette until golden brown, approximately 3-4 minutes. Remove croquette from oil and drain on paper towel lined plates.

To bake the croquettes in the oven

  • Preheat the oven at 425 degrees F. Bake on a parchment lined baking sheet for 20 minutes until cooked through/crispy.

To fry the croquettes in the air fryer

  • Preheat the air fryer at 400 degrees F. Spray croquettes with cooking spray. Cook for 20-25 minutes until crispy.
